FINALLY! Our ocean view lot is under contract. That means that when the sale is final, we can finish our house in San Isidro. I have really been trying not to get too excited because I know how these things can go, but I find myself daydreaming of nice furniture and beautiful wall decor. I am feeling a bit emotionally drained from the tug-of-war in my head. I am looking forward to a nice relaxing weekend at the lodge!
FOR DINNER TONIGHT:
Simple Salisbury Steak – My mother’s recipe. I omitted the sliced mushrooms because only half of us like them, and this was still a good dish. 4 ½ out of 5 stars.
1 can cream of mushroom soup, divided
1 egg, beaten
1 lb. ground beef
¼ cup onion, finely chopped
1/3 cup dry bread crumbs
1 ½ cups sliced mushrooms
1. In bowl, mix thoroughly ¼ cup of the soup, beef, bread crumbs, egg and onion. Shape firmly into 6 patties.
2. In skillet over medium-high heat, cook patties, a few at a time, until browned on both sides. Remove patties and spoon off fat.
3. Stir in remaining soup and mushrooms; return patties to skillet. Reduce heat to low. Cover; simmer 20 min. or until done, turning patties occasionally.
Cream Corn Like No Other – allrecipes.com. This is nothing like creamed corn! 4 ½ out of 5 stars.
Sweet Restaurant Slaw – allrecipes.com. I reduce the sugar to 1/3 cup or less. 4 ½ out of 5 stars.
