GALLO PINTO

This my most favorite Costa Rican dish! It is typically served at breakfast, with a side of sour cream and corn tortillas. I like it with fried eggs and salsa. YUM!

I've been told that you can order the Salsa Lizano through Amazon.

GALLO PINTO

Cook a pot of rice.
Cook a pot of black beans (you may use canned).
*Typically, you use two parts rice to one part beans.
Chopped onion
Chopped red bell pepper
Minced garlic
Salt, Pepper, & Garlic powder
Salsa Lizano *You can use Cumin and a dash of Worcestershire as a substitute.
Ketchup (about 1 T.)
Chopped cilantro
Oil

1. Heat oil in large skillet over med-high heat. Sautee onion, garlic, and pepper. *You may also use fresh homemade salsa instead; like I usually do.

2. Add rice, salt, pepper, and garlic powder; stir and fry for a couple of minutes. Add Lizano and ketchup; stir and fry for a couple of minutes.

3. Add black beans along with a bit of their juice. Add chopped cilantro and stir-fry until heated through.

4. In final taste test, you can adjust seasonings as you like. If you like spice and did not use salsa, you can add a dash of Tobasco.

You can leave the cooked rice & beans in the fridge and throw this together anytime. Enjoy!
