2 3/4 cups diced mealy potatoes
2 T. butter
6 oz mixed mushrooms, chopped
2 garlic cloves, crushed
1 medium egg, beaten
1 T. chopped fresh chives, plus extra to garnish
All-purpose flour, for dusting
Vegetable oil, for deep-frying
salt and pepper
1. Cook the potatoes in a pan of lightly salted boiling water for 10 minutes, or until cooked through.
2. Drain the potatoes well. Mash with a potato masher or fork and set aside.
3. Meanwhile, melt the butter in a skillet. Add the mushrooms and garlic and cook, stirring constantly, for 5 minutes. Drain well.
4. Stir the mushrooms and garlic into the potato, together with the beaten egg and chives.
5. Divide the mixture equally into 4 portions and shape them into round cakes. Toss them in the flour until the outsides of the cakes are completely coated.
6. Pour the oil into the skillet until it is half-full, then heat it until it is hot. Add the potato cakes and cook over medium heat for 10 minutes, until they are golden brown, turning them over halfway through. Serve immediately.
*I used chopped green onion instead of the chives. I also added the salt and pepper in with the mixture before forming the patties. I only had one kind of mushrooms to use (maybe button), and they were good.
From my new "Greatest Ever Potato" cookbook - 5 out of 5 stars!
